So last night I went on a little drive with my dad to The Embassy Suites Hotel near the old Stapleton Airport. According to

This Taurus confused me. Maybe Ford is doing engine testing for the 2016 Taurus in a 2014 Taurus Shell?

Chrysler was also out testing apparently. I don't know why though, all the cars they had out are already in production. They had 2 white 200s (one was a 200C, the other wasn't), and one Cherokee. It was kind weird seeing them truthfully. Maybe SRT testing?

What kind of altitude testing can you do while high? I mean I guess Colorado is the right place for it but I don't understand how its different than sober altitude testing.

That's a laptop mount for engine controller calibration purposes.

These are wheel speed transducers so that the instrumentation can get a high fidelity read on wheel speed. Powertrain calibration engineers don't like to trust the Chassis Engineers' ABS sensor speed calculations...

It's unlikely that FCA was doing much altitude calibration work on the 200C at this point. Most likely, the Ford buys had competitive vehicles along for benchmark purposes.

This test group is more interested in powertrain calibration, emissions, performance, etc. than the vehicle interior, space, etc. It could also be just a convenient tag-a-long vehicle for the test team to get data on while they have already mobilized engr's and equipment out west.
